Yep, 285 is as big as I will go on a 7" wheel. I have 285/75/16 and at 50psi there is about 1/2" that doesn't touch the pavement on the inside and outside. When I load down I'll air up to 65psi and it all touches, anymore and I loose contact.

I realize I can't go to wide on a stock rim, sounds like 275 might be about right. I'm a bit concerned about the tire rubbing on the front when I turn. I guess I could get a place to mount one and try it on to see.
I had 285/75-16's on a 16x9 wheel with a weird offset and I rubbed like crazy on the fronts. Now I have 285/60-18's on some Titan wheels and it doesnt rub. Moral of the story is......if the offset is right they won't rub.

I have 16x8 rims with 285/60r 16 no rubbing at all. Goodyear Eagle gtII's.

Currently running 285-75-16 on a 16x8 Mickey Thompson rim with the simulated beadlock on it with a mildly aggressive tread tire. You mentioned you have the 2wd and not the 4wd. Not sure if rim size makes that much differance in regards to clearance between the top of the tire and the fender. My rims are shot and in need of restoration but, have NOT had any rubbing issues other than the mud flaps and the tires making contact at FULL lock either to the right or left. Been wheeling up at my property and down some pretty rough stuff and have yet to fubar a fender from the tire hitting the bottom or sides of the fenders.
