The LSA tells you how rough the idle will be, but if you have it tuned correctly, a 109 idle can be decent. 
If you go with anything over a 218 cam, you will need a stall. Your truck with the 6.0L, 10.5 compression, TSP 2.5 heads, an other boltons will require a 3000 stall at minimum.
To obtain a decently streetable truck with makes 400 RWHP, get a 228R cam and 3200 stall. Have a live tune done to make it all work well.
